Hi, I’m Ryan but you can call me Chef Chubs!
As a personal chef in Colorado Springs, Colorado, I’ve been working around food for the past 8 years. I started my journey in Seattle, Washington where I attended Culinary School from 2009-2011.
After graduating with a degree in Culinary Arts and Chef Training I worked at Pike Place Market downtown and Steelhead Diner. Since then I’ve lived in Texas and Hawaii before circling back to my home state.
My love of all things food started when I had my first experience with an over-easy egg when I was twelve years old. It was like eating nature’s butter and I was hooked. I have a passion for food, cooking and teaching others how to enjoy what they eat.
I enjoy doing grocery shopping, meal planning, and prepping food for weekly meals. I strive to make dishes that are simple and let the ingredients shine.
I like to produce meals with only 4 ingredients per component so there’s less waste while still being delicious. Ready to work with me on your weekly meal plan?
I regularly cater special family events and private parties. I prefer parties of 2-25 people since there is usually more prep, items, and moving parts involved with larger parties.
This helps keep the menu a bit simpler (but just as delicious). Ready to work with me on your next family event?
Throughout 2017 I worked as the Culinary Lead at Boulder, Colorado’s Sur La Table store. I hosted many cooking classes and showcased how to use different kitchen products and knives.
I can provide guided cooking classes for private events, holiday parties, birthdays, and other special occasions. Want me to host a cooking class in your home?

Brands I’ve worked with as a brand ambassador
Testimonials from companies
“In 2012, Organic Valley launched their new, non-homogenized 100% Grass Milk. As a means of introducing our new product to the public, Organic Valley orchestrated many retail events where our brand manager sampled the product, engaged customers in activities and shared literature and coupons. When our west coast tour hit Colorado, Ryan Nicholson was hired to assist the staff brand ambassador with all aspects of introducing the milk to the public at retail locations. Ryan quickly learned the key product points and nutrition information and was able to share this with the public in a thoughtful, engaging manner. He was very helpful with set up, activities engagement and overall public interface with his positive attitude. Overall, he was an excellent ambassador of Organic Valley products and we were delighted to work with him.” — Kay Fandel, Organic Valley Marketing Partnership Coordinator (2009 – 2014)
